I had it in my head that I wanted to make shrimp enchiladas for dinner last night, so I found this recipe and tweaked it just a bit. I omitted the corn, because for some reason, unless it's on the cob, corn grosses my gross. I also left out the cilantro, cuz I'm not a fan. I also pretty much skipped the first step, and instead got some raw tiger prawns at Costco, and marinated them in EVOO, salt, pepper, cumin, and lime juice for a bit before sauteeing them in EVOO and minced garlic. Let them cool, then chopped them up. Oh, I also added a can of fire roasted diced tomatoes in addition to the rest. Okay - NOW you can follow the recipe. It. Was. GOOD.
I don't mean to toot my own horn, but I was right.
And now that it's Monday, my diet needs to get back on track. Ain't that always the way? Fall off BIG TIME on the weekend, and then it's so much EASIER to eat better when I am at work.
